Meet The Summit Restaurant: a multi-million-dollar revitalisation of the heritage-listed venue at Mt Coot-tha, offering three distinctive experiences perfeched above the skyline.
The Summit Restaurant is home to a refined dining room nestled within the heritage building, a vibrant brewpub-style public bar, and an expansive verandah boasting panoramic views across Brisbane and out to Moreton Bay. Brought to life by the renowned Mantle Group, it’s a place for Queenslanders about Queenslanders.
“The Summit is one of the most unique dining sites in the country; beautiful by day and absolutely spectacular at night,” Mantle Group founder Godfrey Mantle said. “But most importantly, it’s a place for the people of Brisbane. Our most important guests are our neighbours—the locals who walk up the mountain every day, who bring their families here on weekends, and who have made this place part of their lives. We wanted to create something that felt worthy of that loyalty.”
In the kitchen, hatted chef Kym Machin (previously Urbane) leads a bold and produce-driven offering—complementing seamlessly with the surrounding natural bushland. Expect modern Australian cuisine with a distinctly Queensland heart—such as Elliott Heads spanner crab, Daintree barramundi and Longreach organic lamb—alongside ingredients grown in The Summit’s own edible gardens and beehives.
The menu is split into themed sections to encourage exploration and sharing, spanning Sea, Air, Land, Earth and Garden. There’s Goldband Snapper with wild garlic and native ginger, roast duck smoked over paperbark, almond-fed pork with pickled apples, and pumpkin agnolotti with candied shoots. If you prefer to leave it to the pros, The Summit offers two chef-curated tasting menus as well as a more casual encounter in the Bar Share menu—featuring elevated bites like Rocky Point cobia with buttermilk dressing, goats cheese puffs, lamb tacos, and beef and beetroot tartare.
“With this menu, we wanted to tell a story of place, showcasing the best of Queensland while exploring our diverse climates, regions and native ingredients,” Machin said. “When you’re standing at The Summit, you can see for miles—from the city to the bay and out to the hinterland—and we wanted the menu to reflect that sense of scale and beauty. It’s not just about great food; it’s about creating a genuine connection to this land and the people who shape it.”
The Summit’s new fit-out blends heritage charm with contemporary elegance, crafted by acclaimed Brisbane firm Hogg & Lamb (The Bathhouse Albion, Babylon Brisbane and Lune Croissanterie). From polished timber finishes to open-air outlooks, the space basically guarantees an unforgettable experience.
The opening of The Summit Restaurant marks the first step in Mantle Group’s epic plans for the Mt Coot-tha summit, which includes a two-level Pavilion venue, a boutique gin distillery, and a cultural tourism experience to honour the mountain’s rich history and significance—all hoping to be delivered ahead of the Brisbane 2032 Olympic and Paralympic Games.
