The Gold Coast’s dining scene is set to receive a major upgrade this weekend with the highly-anticipated opening of kōst in Broadbeach. The slick, coastal-inspired restaurant eloquently describes itself as ‘a place where sensory meets the sea; where rustic meets refined’.

The epitome of a modern bar and grill concept, kōst boasts Australia’s first two-metre Mibrasa charcoal bar and grill and has taken over three previous tenancies on Oracle Boulevard to create one sprawling venue and a striking outdoor pavilion; encompassing a stunning 130-seat restaurant and 50 seats for cocktail-style dining.

kōst seamlessly blends elevated bar and grill cuisine with playful cocktails, fine wine and live fuel cooking methods, to deliver a high-level sensory immersion experience. A harmonious fusion of culinary passion and elegant design finds its culmination at this novel establishment. Speaking of design, almost everything in kōst has been carefully hand designed and procured—from the curved timber seats to the gold accented tableware to the stone tables with 'kōst' emblazoned on them.

The exquisite menu stars epicurean offerings of charcoal-grilled and dry-aged dishes, seafood platters, whole market fish and modern takes on plant-based dishes. Start small with snacks like Fraser Isle crab with witlof and crème fraîche before moving onto the raw bar showcasing delicacies like fire kissed yellowfin tuna and kōst ceviche.

For larger groups the seafood platter and tower encapsulate kōst’s immersive dining experience, or dive into the ‘Over Embers’ menu which traverses ocean, land and earth elements with dishes like Moreton Bay bug with harissa bisque and fennel, 800g black onyx bone in ribeye and purple heirloom cauliflower with whipped tahini.

We would be remiss not to mention champagne and caviar trolley that you can indulge in throughout your dining experience. Oh, and the artfully arranged desserts like hazelnut rocher with toffee and a mandarin sabayon with carrot marmalade and blood orange.

The mastermind behind this exceptional culinary endeavour is none other than Dave Galvin, a luminary in the realm of Gold Coast hospitality. Galvin and his dedicated team have invested more than three years of meticulous planning into this venture, culminating in a restaurant that seamlessly amalgamates coastal influences with culinary innovation. Galvin describes kōst as 25 years of his hospitality experience “poured into one sleek and sexy venue”. man pouring sauce on steak

Among the hallmark features of this spectacularly designed establishment, a thoughtfully designed private dining chamber commands attention and a dry age cool room affords patrons a glimpse of the meticulous ageing process—an enticing spectacle visible from Oracle Boulevard. There’s also an experiential cocktail programme, a magnificent 130+ bottle wine list and an extensive Champagne range by the flute, curated by a master sommelier.

“[kōst is] a design-led venue which connects guests to four key coastal elements. Air, Water, Fire, Earth. A place where bar meets grill….Think fire-kissed food, immersive drinks, killer cocktails, impressive wine list and impeccable service in a space we have created, led by the best in architectural design, ” said Dave Galvin, owner of Kōst.

The unique dining concept is brought to us from the skilful team behind Mozza Mozza, and Bird Royale, so the bar is already high. And rest assured, do they deliver. Heading up the kitchen at kōst, is Executive Chef, Sebbie Kenyon who is a somewhat of a veritable virtuoso in culinary space, having worked in Paris, London, Moscow, Jakarta and Australia, augmented by opening four of his own restaurants. table flat lay
