THE VERDICT
Collingwood fine diner IDES has reached cult status in Melbourne, attracting guest chefs from all over the country (usually IDES alum) and you need to be patient to secure a booking which are released two months in advance.
Run by ex-Attica sous chef Peter Gunn, bringing refined, technique-heavy dishes which are designed and delivered with impeccable skill.
Menus will rotate according to seasonability and there are six and twelve course iterations, as well as their famous One Day Sunday which runs six courses at a wallet-friendly $155. Hot tip: leave room for dessert – it would be unspeakable to not eat it!
If you fancy a few cocktails beforehand, IDES' attached bar March is a must with their signature yuzu drop cocktail.
