First, Ricos was a food truck slinging birria tacos right outside Messina HQ in Rosebery. Then, there was a brick-and-mortar outpost in Chippendale. And now, the cult-favourite taco joint has taken over both storeys of The Norfolk in Redfern.

The new digs for Rico's Tacos and founder Toby Wilson come via a new partnership with PUBLIC Hospitality—the crew behind pub makeovers and shakeups like El Primo Sanchez at the former Rose Hotel in Paddington and Fabbrica at The Exchange Hotel in Balmain. 

Downstairs and throughout The Norfolk's beloved beer garden is a more casual vibe. Splashed in a vibrant mustard yellow, you can fill up on Ricos' signature tacos like chipotle beer barbacoa, al pastor, and fish.

Newbies on the menu include Mexican-style "hamburguesas" served with fries, a half-chook plate with house-made hot sauce, and fresh taco flavours like chicken with almond coffee mole. 

Upstairs is "Club Ricos", a self-described disco den meets sports bar inspired by Mexican sports bars of the 60s. Beneath a disco ball and surrounded by vintage Mexican artwork and cherry red vinyl booths, you'll find a party atmosphere and a late-night menu of quesadillas and share plates. 

PUBLIC has appointed Maybe Sammy and the El Primo team to do drinks. Try the lemongrass Paloma or Pavlova Colada, or stick to classic Tecate beer. 

Ricos Tacos at The Norfolk will open on Saturday 23 September.
