The verdict

Housed in a former beach-changing shed, the heritage-listed Bathers' Pavilion is an iconic establishment for fine dining at Sydney's picturesque Balmoral Beach. And now, a wave of fresh air is set to blow through its Art Deco walls, kickstarting a new era for the Pavillion. 

A full-blown refurbishment has been completed, and to make it extra special, the team heading up this historical gem is packed with all the talent. Former Acme front-runners Cam Fairbairn and Jess Mead will act as front-of-house and restaurant manager respectively, and Cameron Johnston and co-owner Serge Dansereau will be running the kitchen alongside pastry legend Kumiko Endo (who you know from Attica and Tetsuya).

The upgrade has meant an insane design overhaul by the design pros at Luchetti Krelle, who worked on venues like Manly Greenhouse and Banskii, so brace yourselves for all the beachside vibes through the pavilion’s brand new bistro, lounge, Sunroom bar and fine dining restaurant. 

The menu's also had a full revamp: Dansereau and Johnston have started from scratch to create a new foodie journey they're describing as "elegant and unfussy produce-led coastal dining." It's complemented by a massive 350-strong wine list, just casually.  

The Bather's Kiosk has you sorted with takeaway beach picnic hampers, artisan ice pops, fish and chips, merch and more.

The rooftop terrace will also be open for the first time (Sundays only for now) and will sport a champagne bar where you can grab a glass and go hard on fresh oysters.
